Breakfast Burrito

Ingredients

  • 15 g Old Bay Seasoning
  • 50 ml Oil
  • 1 Red Onion, diced
  • 3 Red Peppers, diced
  • 300 g Black Beans, drained and rinsed
  • 20 Eggs, beaten
  • 20 g Butter
  • 10 Tortillas
  • 100 ml Sour Cream
  • 100 ml Salsa
  • 2 avocados, sliced
Method

1. Heat the oil in a large pan over a medium heat. Cook the onions and peppers until soft and charred (about 8 minutes). Add the black beans and Old Bay Seasoning and cook for a further 3 minutes until cooked through. 2. Melt the butter in a pan and gently cook the beaten eggs until they are soft and scrambled. 3. Spread each tortilla with a spoonful of sour cream and salsa, then a spoon of the black bean mixture and top with the scrambled eggs and avocado. 4. Roll up burrito style.
