Old Bay BBQ Mustard Fish Collars

Ingredients
  • Serves 8
  • 8 Fish Collars (salmon or any white-fleshed fish such as hamachi are recommended)
  • For the Mustard:
  • 170 g Dijon or Yellow Deli Mustard
  • 180 ml White Wine Vinegar
  • 1.5 tbsp Butter
  • 2 tsp Salt
  • 2 tbsp Worcestershire Sauce
  • 1 tsp Ground Black Pepper
  • 2 tsp Frank's Red Hot
  • 1 tsp Old Bay Seasoning
Method

1. Mix the BBQ sauce ingredients all together, buzz in a blender until emulsified. 2. Preheat the oven to 325℉. 3. Clean the fish collars of all their scales. 4. Brush fish collars lightly with the BBQ sauce. 5. Put the collars in the oven. 6. Brush with more BBQ sauce every 5-10 minutes for 25 minutes.
