Old Bay Seafood Chowder

Ingredients

  • 170 g Frozen Haddock
  • 2.5 tsp Butter or Margarine
  • 0.33 Large Onion, chopped
  • 1 Stalk of Celery, chopped
  • 1 Large Carrot, chopped
  • 1 Large Potato, sliced
  • 4 tbsp Flour
  • 0.5 tsp Salt
  • 2.5 tsp Old Bay Seasoning
  • 266 ml Chicken Broth
  • 296 ml Milk
  • 340 g Crab Meat
  • 114 g Raw Shrimp
  • 6 tbsp Cheddar Cheese, grated
Method

1. Thaw the frozen fish enough to cut it into cubes. Reserve. 2. In a large saucepan melt the butter or margarine. Add onions, celery, carrots and potatoes and cool until the onions are transparent. Carefully blend in the flour, salt and Old Bay Seasoning. Cook for 1 minute, stirring constantly. 3. Add chicken broth (undiluted) to the milk and seasoned vegetables and cook over a medium heat for 25 minutes. Add reserved haddock, shrimp and chopped crab meat and cook for an additional 10 minutes. 4.Stir in shredded cheese. Continue to stir and cook until the cheese melts. Serve immediately.
