Santa Maria Stir Fried Chicken or Prawn Fajitas

  • 10-20 Santa Maria Tortilla Wraps
  • 10 x 7 oz Chicken Fillets
  • 700-800 g of Cooked Tiger Prawns
  • Santa Maria Fajita Seasoning
  • 2-4 Mixed Peppers
  • 2 Large Spanish Onions
  • 20 Mushrooms
  • Olive Oil
  • 10 Large Baking Potatoes
  • 300-400 g Philadelphia Cream Cheese
  • Santa Maria Chili and Lime Seasoning
  • 300-400 g Mixed Leaves
  • Santa Maria Pickling Spice

1. Cut the chicken into strips and leave to marinate in a bowl with the Santa Maria Fajita Seasoning and a little olive oil. 2. Slice spanish onions, 2 red onions, mixed peppers and mushrooms into strips. 3. Slice the remaining red onions thinly and place them in a bowl, cover with the Santa Maria Pickling Spice Mix and mix well. 4. Bake the potatoes for approximately 40 minutes until the potato is soft. 5. Heat the pan, add the olive oil and chicken and cook until browned, then place in a bowl in the oven for approximately 20 minutes. 6. Use the same pan to fry the vegetables, add more fajita seasoning and place in another bowl in the oven. 7. When the potato is cooked split it and put a spoonful of Philadelphia mixed with Santa Maria Chili and Lime inside. 8. Warm the tortillas in the oven or microwave and serve the chicken, vegetables and baked potatoes on a sharing platter. 9 Place the mixed leaves in the centre of a bowl and scatter pickled red onions on top. 10. If using a cooked prawns as a substitute or together with the chicken add to the vegetables when frying.
