Chilli Con Carne & Rice
Ingredients
- 2 tsp rapeseed oil
- 450 g extra lean beef mince
- 1 large onion, finely chopped
- 1 green pepper, deseeded and chopped
- 1 tsp garlic salt
- 1/2 - 1 tsp hot chilli powder
- 1/2 tsp ground cumin
- 400 g tin chopped tomatoes
- 2 tbsp tomato puree
- 400 g tin red kidney beans, drained and rinsed
- 250 g brown rice
- ground black pepper, to season
Method
1. Heat oil and brown mince for 4-5 minutes. Add the onions, green pepper, garlic, chilli powder, cumin and cook for another 2-3 minutes. 2. Add the remaining ingredients (except the rice). Bring the sauce to the boil, then lower the heat, cover and simmer gently for 15-20 minutes. 3. Meanwhile, cook the rice according to the packet instructions. 4. Season the chilli with ground black pepper to taste. Serve with boiled rice.
