Old Bay and Corn Crusted Tilapia Sandwich

- 113g Cornmeal
- 113g Flour
- 113g Old Bay Seasoning
- 4 Tilapia Fillets (170g each)
- 2 Eggs, beaten
- 113g Mayonnaise
- 0.5 tsp Lemon Zest
- 1 tbsp Garlic Salt with Parsley
- 1 tsp Lemon Juice
- 4 Ciabatta Rolls
- 4 Tomatoes, sliced
- 4 Green Lettuce Leaves
1. Combine cornmeal, flour and Old Bay Seasoning. Take fish through a standard breading procedure; first dipping fish in the egg wash and finishing with the flour/cornmeal mixture. Fry fish in a 375℉ oil until an internal temperature of 140℉ is reached. 2. Mix mayonnaise with lemon zest, garlic salt and lemon juice. Refrigerate for 30 minutes to allow flavours to blend. 3. To assemble sandwich, spread 1 tbsp of lemon mayonnaise on each side of a ciabatta roll. Place the crusted tilapia on the heel of the roll and top with 2 slices of tomato, 1 slice of lettuce and top with the crown of the roll.
