Pineapple Fajita Pizza

  • 1 tbsp cooking oil
  • 500 g chicken breast fillet
  • 1 sachet Santa Maria Medium Fajita Seasoning Mix
  • 1 red onion
  • 1 red pepper
  • 0.5 pineapple
  • 4 Santa Maria Plain Tortilla Soft Tortillas
  • 0.5 bottle Santa Maria Medium Salsa
  • 250 g grated mozzarella cheese

1. Pre-heat the oven to 220°C. Heat the oil in a frying pan and brown the chicken strips. Add the onion, pepper and Santa Maria Medium Fajita Seasoning Mix. Leave to sizzle for about 3-4 minutes, add the pineapple chunks. 2. Divide the Santa Maria Medium Salsa equally between the Tortillas and add half the cheese. Then add the fajita filling and top with the rest of the cheese. 3. Place the pizzas on a baking tray and bake in the oven on the lowest shelf. Bake for 5-8 minutes, or until the cheese has melted and turned a lovely golden colour. 4. Serve immediately with a delicious green salad. Garnish pizzas with rocket.
